APPLE CRUMBLE

A traditional dessert that is still relevant and worth celebrating! She is perfectly balanced and fit for any occasion.

INGREDIENTS

CRUMBLE
125g butter, room temperature
¾ cup sugar
1 ½ cup cake flour
2 tsp baking powder
½ tsp salt
1 ½ cup desiccated coconut

FILLING
2 x 385g tinned apples
½ cup sugar
½ cup raisins (optional)
1 tbsp custard powder
½ tsp salt
1 tbsp vanilla essence

METHOD

CRUMBLE
1. In a large mixing bowl, cream the butter and sugar with an electric mixer.
2. Add the flour, baking powder, salt and coconut to the butter and sugar mixture and mix until well combined.
3. The crumble should be dry and crumbly.
4. Prepare a round or square baking dish with non-stick spray.
5. Add two thirds of the crumble to the dish and press to the bottom and against the sides.

FILLING
1. Preheat the oven to 160C and place the oven rack in the centre.
2. In a medium sized pot, heat the apples, sugar and raisins.
3. In a small bowl, dissolve the custard powder with a tablespoon of water and add the salt and vanilla essence and mix.
4. Add the custard mixture to the apple mixture and boil for 3 minutes.
5. Spoon the apple filling into the prepared dish and crumble the remaining third of the crumble over the filling.
6. Bake for 25-30 minutes until the crumble is light brown.
7. Remove from the oven and serve with cream or ice cream.
