INGREDIENTS
250g butter
750g dried dates, chopped (Tip 1)
1/4 cup brown sugar
1/4 tsp salt
1 tsp vanilla essence
1 egg
1 packet Marie biscuits
2 cups Rice Krispies
1/2 cup desiccated coconut
METHOD
1. In a large pot, add the butter, chopped dates, sugar and salt.
2. Add the pot to the stove and heat slowly until all the ingredients are melted. Remove from the heat and set aside.
3. Whisk together the egg and vanilla essence in a small cup.
4. Slowly add the egg mixture to the date mixture while whisking until everything is well combined and smooth (Tip 2).
5. Add the crushed biscuits and Rice Krispies to the date mixture and mix well. Set aside to cool down.
6. Add the coconut to a medium bowl.
7. Roll date balls between your palms, add them to the coconut and stir the bowl until each date is fully covered.
8. Store the dates in an airtight container or a glass jar.
9. Share and enjoy every bite!
TIPS
1. Check the baking aisle in the shops for dried dates. I usually buy the dates that are pressed together and shaped into a big cube as they take you further than the packets or fresh dates.
2. If the date mixture is still too hot, the egg will curdle when added. If you want to be safe, add a bit of the melted butter to the egg before adding the egg back into the date mixture.
